The number is assigned to the task automatically, you can always see it in the contribution Details of the task in the sidebar:

It is convenient to transfer the number to colleagues for a clear understanding of what is being said (not "well, that task from Sokolov" and "task number 4356"). Also the number is used for [[How to add external message to a task? | sending emails to a virtual email task]].
Numbers can be useful for clarifying which task your talking about ("task number 4356" instead of "that one task from John"). Numbers are also used when sending emails to a task's virtual email address.
